Thick Crust

Oftentimes known as Chicago Style or Sicilian, this pie is preferred with those who enjoy a thick crust. Dough that is prepared to rise in a pan with 2 - 3 inch sides and still be somewhat soft after baking is used in thick crusted styles. Standard recipes for deep-dish dough always use a high-quality flour, oil, salt, and dry yeast. To make the dough straightforward to handle and retain the flexible characteristics after baking many variations may require milk, butter, sugar or eggs. With their thick crust dough recipes, some chefs deliver a crisp exterior and soft center. Thick dough pizzas are hearty and highlight the taste of the crust as well as the toppings or fillings.

Thin Crust

The recipe employed to create a thin crust pizza, and frequently associated with the New York City variety of pizza, produces a flexible and larger piece. This dough formulated for baking on a flat pan and requires some kneading and forming during the preparation. The essential dough recipe ingredients are flour, yeast, salt and oil. To assist with handling and to evenly brown the crust cornmeal is quite often sprinkled on the surface of the dough. Preferred throughout Europe and the U.S., thin dough pizzas put more importance on the toppings.

Ultra-Thin Crust

Countless pizza enthusiasts flock to this hip version of the classic dish that has a nearly cracker-like crust. The notion behind super thin pizzas is to showcase the toppings rather than the dough. These pizzas cook quickly and may be susceptible to produce dry results or burning if not watched diligently throughout the cooking period. Conforming well to a crispy, thin pizza are multi-grain flour, whole wheat flour, gluten free ingredients and garden vegetables.
